UT Tailgate: The Beehive of Game Day

In the beehive that is game day, sometimes it is hard finding one, sweet tailgate rig that really stands out from the crowd. This was not a problem for the Texas Tech vs. Texas tailgate. A monster stood out from the crowd.

This thing is massive. It must be at least 15′ tall at the top of the stacks. Two fireboxes feeding a enormous rotisserie smoker. Marcus Tejada, of the Tejada Diehard Horns Tailgate, built this from scratch with his uncle last year. Click on the link below for more pictures…

Trays and trays of pork ribs, circling in smoke. The rotisserie keeps the meat on the move, eliminating the problem of your ribs sitting on a hot spot in your smoker. I love this method.

The ribs were smokey and moist with a nice balance of hot and sweet (mustard and brown sugar).

There were many impressive rigs around campus, but there was one dark horse in the running. Travis True’s ‘Hot Wheels’. I’m calling it this because most of the parts seem to be on permanent loan from H.E.B.

Travis is an Austinite and Texas Tech fan who has a creative streak when it comes to tailgate cooker construction.

Travis’ agent walked me through the finer points of this rig: inverted shopping cart, salvaged ‘food grade’ container barrel, cart handle relocation (with beverage holders).

The crew had not actually fired this beauty up yet, deciding to focus more on the liquid portion of the afternoon. Travis’ agent gave this cooker one thumbs up.
